Work you Butt

 


If you just walk up and put rub on a Boston Butt without trimming it, injecting it, or even doing anything but rubbing it. That is what makes average pork.  Then you got to hide the flat taste with a mustard or vinegar sauce because the pork has no flavor.

Trim, take the fat cap off the Butt, take the membranes off the Butt.  Inject, I’m going to do a new process on Butts this weekend. then rub 15 minutes before you put them

into the cooker! Work your Butts, that is what BBQ is all about!
