Julia Davison said on the radio show that flavoring pork or meat is oil and salt that is effective. Doing an Oil Based Injection goes against my grain but water base seems to just run back out. I’ve seen some champions who used oil based and the injection stayed in and I can see how the oil in the meat would help cook the meat. Would it leave the meat greasy and a mess?
I’ve always seen and been taught apple juice and Butcher BBQ Pork Injection works the best but is that a throw you off trail. I did water based injection again this week but now I’m going to go ahead and try Oil based next week. One time I made a brisket with Sweet Smoke Q Beef Injection and it came out so good. It had the best texture of any beef I had ever made.
I can’t remember if I put oil base in it or not. I know I put apple juice in it. Oil base would probably make the injection stick to the meat better. I don’t know why I have a mental problem shifting to oil but I’m going to do it next week with 2 more butts.
