Honey Glazed Ham
When you want to glaze of ham its really all about Honey and Brown Sugar. Honey for the flavor brown sugar to make it a paste.
- 20 pound Ham
- 24 oz Honey
- 1/2 pound of Brown Sugar
- Dijon Mustard to taste 1 teaspoonful
- Yellow Mustard
Mix the ingredients together in a bowl. Don’t heat it you want it to stay a paste. Don’t get a brush to put it on put on some cooking gloves and apply the paste with you hands.
First you have to score your ham. Take a knife and cut it into a matrix. Try to get at least 1 inch deep on a 20 pound ham. This ham in the picture is scored and has the first coat of glaze on it.
After you have scored it then its time to inject. Tony Chachere’s Praline Honey Ham injection is great. Put as much in the ham as you can get then apply the paste.
Try to get the paste into the slice marks and the as deep as you can before you put it into the smoker. The first glaze put it in for 30 minutes. Put it in a full size pan for this size Ham you can use a half pan for a smaller ham. Then put some butter in the pan
This is after the first 30 minutes the grid will open up. Then it time to put another layer of paste on the top of the ham try to make sure some gets in every gap.
Its about doing this three times. The third time will really put a coat that will sink into the ham.
I cooked the ham over night in the oven at 225 F with the same juice in the pan an it really was wonderful. Its still pork and needs to be cooked falling apart done!
