Cooking Times

What determines cooking times?

  • Its common sense.
  • Beef is going to take longer than chicken.
  • Pork is going to take as long as beef.
  • The more mass the longer its going to take.
  • The more fat you take off the shorter you time will be.
  • The more membranes and barrier you take off it shortens the time

Competition Cooking times

  • Chicken Thighs – 1 hour at 300 F inject it just before you put on the BBQ Sauce Internal Temperature 175 F
  • Chicken Breast – 1 hour 15 minute 300 F don’t take it out of the azue till time to turn in
  • Drum sticks – 45 minutes 300 F make sure and brine all night

Beef

  • 12-15 pounds 6- 8 hours at 300 F internal Temperature 195-210
  • 16-20 pounds 8-10 hours at 300 F internal Temperature 195-210

Pork

  • Boston Butts – 7-9 pounds 6 hours at 300 F internal Temperature 185 F for money muscle, tubes, horn,  burp it as soon as you take it out.
  • Boston Butts – 7  1/2 – 10 hours at 300 Degrees internal Temperature 195-200 for pulled, chopped, bubble gum pieces.
  • Ribs – 3-4 hours at 300 F wrap at 2 hours
  • Pork Loin – 3-5 pounds 2 hours at 300 F. Wrap at 1 – 1 1/2 hours.

Chicken Cooking Times 

  • 2-1/2 to 3 pounds: Roast at 375 degrees F for 1 to 1-1/4 hours
  • 3 to 3-1/2 pounds: Roast at 375 degrees F for 1-1/4 to 1-1/2 hours
  • 3-1/2 to 4 pounds: Roast at 375 degrees F for 1-1/4 to 1-3/4 hours
  • 4-1/2 to 5 pounds: Roast at 375 degrees F for 1-1/2 to 2 hours

Beef Cooking Times

  • 2 pound roast @ 300 degrees F 4 hours
  • 3 pound roast @ 300 degrees F 5 hours
  • 4 pound roast @ 300 degrees F 5 1/2 hours
  • 5 – 7 pound roast @ 300 degrees F 6 hours
  • 8-12 pound roast @300 degrees F 8 hours
  • 13-20 pound roast @300 degrees F 12 hours

 

Pork Cooking Times

The rule of thumb for pork roasts is to cook them 25 minutes per pound of meat at 350 degrees F (175 degrees C). Use a thermometer to read the internal temperature of the roast.
