We are excited to announce our first class for 2013. It will be held in Columbia, SC at the State Farmers Market on Saturday, February 16th, 2013, from 8AM until 4PM. We are finalizing our instructor line up and incorporating some new instructional approaches. Class content will still revolve around the four basic BBQ meat groups; Chicken, Ribs, Pork and Brisket.

Our classes are set up to educate BBQ enthuses from the beginner level to the more seasoned BBQ’er, as well as acting to educate BBQ judges on the complexity and efforts faced by competitive BBQ teams. Instructions are oriented to provide the participants all the knowledge and skills needed to produce quality BBQ in their own backyard, as well as at a competitive level.

Over the past 2 years, we have had the pleasure of working with and educating over 100 participants. Several competitive cook teams have attended our classes, taken what they have learned, and elevated their competition level to winning contest. Many other participants have revealed about how the quality of their BBQ has tremendously increased. We strive to ensure each participant receives the personal attention they deserve.

Beef Injection and Warming Juice

2 cups beef broth
¼ cup Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon cayenne pepper

Combine all ingredients in a bowl, mix well and refrigerate before injecting. Inject beef until it will not hold anymore.

Makes 2 and one-fourth cups
