Off Sets were the first line of cookers brought into the Competition Circuit. John Willingham actually has the patent on off set cooking. Off sets have always been a staple of out door cooking. The advantage of an offset cooker is great smoke penetration, and ease of maneuvering. The wood has to be added every hour on most some can go as long as 2-4 hours. The Jambo is the Best of the Best of the Offsets but it cost as much as $25000.00 where as a Lang BBQ Smoker can do the same job with a little more wood for a fraction of that cost.
Offsets are used on cooking trailers many times.
