Mustard in BBQ has always been a binding factor.  Mustard not only binds rubs to meat it also creates beautiful color. When choosing what mustard you want to use it can be the difference between great BBQ and I blew it BBQ! French’s is a safe bet. companies who make generics of French’s are probably OK but when it comes to Dijon and other mustard’s as we see on the video’s above.  They are made from a different type of seed.  They will yield a different product.  

Mustard is used to coat Ribs, Pork Loin, and a lot of other cuts of Pork.  I’ve seen people put Mustard on Beef but I would never do that.

When you talk about Mustard your up against tradition.  French’s Mustard and that type is what 90% of the people expect.  When making BBQ if you don’t want to surprise anyone stick the basics. Use regular yellow mustard. 

Watch it change color. Most of the times if you can still see yellow your meat is not done. When all the mustard turns that beautiful color in helping the Maillard Reaction the pork will be done.  Just check your internal temperature.
