Green Chilies are being discovered.  They are the main stay of food in New Mexico. They are being used more and more all over the world. Red Chilies are just Green Chilies that have stayed on the plant longer. All Green Chilies will eventually turn red.

The sunlight to me has to have something to do with how good Hatch Green Chilies grown. It has to make a very effective growing situation for the chilies. New Mexico is the home to the Greatest label company in the world for products. The non stop light has created the want for the best color combinations in the world and the best chilies in the world.

The whole deal with green chilies you have to take the skin off.  Roast the green chilies as you see below so the meat below the skin will come off the skin.  Green Chilies
Even when you get dried green chilies you have to take the skin off the green chilies. When you buy dried chilies you have to reconstitute them by leaving them in water for 1-24 hours your choice. After they are reconstituted then scrape all the meat out or off the green chili you can. You can strain the chilies to try and leave the big parts behind the pulp that is going to come off the chilies.

As you see in the video below they put them in a roaster and roll as many as a bushel of green chilies this is to separate the skin from the meat of the chili. Then the chilies are taken out and the pulp removed. As you see in the cans above they can chop, dice, or give whole the green chilies in a can.

In New Mexico Green Chilies area a way of life. It is in every dish. It is a trip once a week to Hatch.  I went to restaurant in Artesia,  New Mexico and it was in every dish.
